Inniskillin is located in the Niagra Peninsula, about and hour and a half from Toronto. Renowned as the world leader in Icewine. VQA (Vinters Quality Alliance) is the quality controlled, not allowing artificial freezing. Harvest can not begin until temperatures drop below minus 8 degrees celsius. The grapes are pressed after frozen to produce the nectar. Grapes are left on the vine well into the winter months to concentrate & intensify the flavours, as water content freezes thaws and dehydrate in each Icewine.
Friends were on vacation in Canada and they know how much I love this Icewine, so they brought me a bottle back as a gift. Yes, I have some pretty cool friends. 🙂 The other night we did share together.
The bottle like most dessert wines is a 375ml bottle, best served at 5-8 degrees C. Best served in a Riedel Vinum Extreme stemware and stores properly for up to four weeks after opening. You can have this wine as an aperitif or with dessert or alone as a dessert.
The bouquet is candied red berry aroma’s and strawberry notes. Fresh strawberries, and creme with some raisins, dried plum notes on the palate, long enticing finish.
Pairs well with a Tiramesu or Pate’, or certain cheeses such as:
Idiazabal- Spain- Sheep, lightly smokes, earth, gamey and nutty.
Pecorino, Sardo, Tartufo or Toscana-Italy-Sheep, earthy, flowery, gamey and nutty.
This is my personal favorite Icewine, as they make other’s such as Vidal etc… but this one is so lovely to drink, sure it is expensive but it takes so much to make an incredibly delightful Icewine, and well worth every dollar spent. Highly reccomend!
